How Does Cultivar Affect Sugar Profile, Crude Fiber, Macro- and Micronutrients, Total Phenolic Content, and Antioxidant Activity on Ficus carica Leaves?

چکیده

The objective of this research was to evaluate the effect cultivar on nutritional and functional parameters Ficus carica leaves. This information will provide basis for their potential use future incorporation in other food matrices as ingredients. Sucrose, glucose, fructose were detected all fig leaves, with mean values 48.94, 66.74, 43.70 g kg−1 dried weight (dw), respectively. crude fiber range between 6.53% 22.67%, being an interesting source fiber. most abundant macronutrient calcium (Ca), followed by potassium (K) magnesium (Mg). All cultivars showed high concentrations iron (Fe). leaves can be a good material obtaining extracts rich alternative these compounds incorporated into nutraceutical and/or matrices.
